Spicy Mexican Bean Soup
Low calorie, packed full of fibre, rich in protein and oozing with comforting warmth. This cheeky little number is perfect on a cold day.
Ingredients
- 140g Mixed Beans ( Kidney, pinto, black beans, cannellini ) - it's your choice!
- 200g ( around half a can ) Tinned tomatoes
- 1 clove of garlic minced
- 1/2 Small red onion, chopped
- 1/4tsp ground coriander
- 1/4 tsp cumin
- 1/4 tsp smoked paprika
- 1/2 tsp chilli powder
- 1/2 Knorr stockpot - Vegetable
- fill to line hot water
Instructions
- Add the beans, tomatoes, onion, garlic and spices to the pot
- add half of the Knorr stockpot
- Fill to the MAX line inside the machine with hot water
- give all your ingredients a good stir
- Replace the lid and connect to the power supply.
- Using the select buttons, choose the CHUNKY program. Press start when illuminated
- When the program commences the light will remain solid and constant
- The program take 24 mins to gently cook your ingredients. when the program is finished it will beep 3 times
- Open the lid and check your ingredients. This soup is great with a bit of texture, we recommend that you blend it a little to get this consistency
- Replace the lid and using the select button choose the BLEND function, press start. This program will provide a burst of 10 seconds of blending, so it will not blend it too much - just a little - when you're pleased with the consistency , pour our your soup
- Sprinkle with a little cheese - mozzarella is great for melting !
- Serve with some nachos or tortilla chips ( in this example we sprayed a flour tortilla with oil, cut into triangle pieces, sprinkled smoked paprika and cooked in the Air fryer for 5 mins - delicious !
