Spicy Mexican Bean Soup

Low calorie, packed full of fibre, rich in protein and oozing with comforting warmth. This cheeky little number is perfect on a cold day.

Ingredients

  • 140g Mixed Beans ( Kidney, pinto, black beans, cannellini ) - it's your choice!
  • 200g ( around half a can ) Tinned tomatoes
  • 1 clove of garlic minced
  • 1/2 Small red onion, chopped
  • 1/4tsp ground coriander
  • 1/4 tsp cumin
  • 1/4 tsp smoked paprika
  • 1/2 tsp chilli powder
  • 1/2 Knorr stockpot - Vegetable
  • fill to line hot water

Instructions

  1. Add the beans, tomatoes, onion, garlic and spices to the pot
  2. add half of the Knorr stockpot
  3. Fill to the MAX line inside the machine with hot water
  4. give all your ingredients a good stir
  5. Replace the lid and connect to the power supply.
  6. Using the select buttons, choose the CHUNKY program. Press start when illuminated
  7. When the program commences the light will remain solid and constant
  8. The program take 24 mins to gently cook your ingredients. when the program is finished it will beep 3 times
  9. Open the lid and check your ingredients. This soup is great with a bit of texture, we recommend that you blend it a little to get this consistency
  10. Replace the lid and using the select button choose the BLEND function, press start. This program will provide a burst of 10 seconds of blending, so it will not blend it too much - just a little - when you're pleased with the consistency , pour our your soup
  11. Sprinkle with a little cheese - mozzarella is great for melting !
  12. Serve with some nachos or tortilla chips ( in this example we sprayed a flour tortilla with oil, cut into triangle pieces, sprinkled smoked paprika and cooked in the Air fryer for 5 mins - delicious !
