Cream of Asparagus
Asparagus is so fresh and tasty. It is low in calories yet boasts a wealth of nutrients such as Vitamins K, A, C and E,
Ingredients
- about 5 Asparagus spears, chopped
- 1 stalk celery, chopped
- 3 Spring onions, chopped
- 1 clove garlic, minced
- 200ml vegetable or chicken stock ( use home made or from 1/2 stock cube or stockpot)
- 1 tsp double cream or crème fraîche
- knob of butter
- Fresh chopped chives
- salt and pepper
Instructions
- Start by chopping the vegetables. When preparing the spears, simply break off the tougher ends as you will find there is a natural point where they will snap off. Cut the celery, asparagus and Spring onions into 1 inch pieces. Add to the Justme Soup maker
- Add a minced clove of garlic or for convenience you could use garlic puree
- You can use your own homemade stock , or for convenience you can make up 200ml of stock using 1/2 stockpot or stockcube. Pour into the soup maker
- For extra richness add a knob of butter
- Add salt and pepper
- Replace the lid and select the SMOOTH function. Press the start button. The program will gently cook the ingredients and then blend to a smooth consistency.
- When the soup has cooked and blended after 19 minutes, carefully remove the lid. If you wish to add the cream, it is a good idea to to add it now for extra creaminess
- Drop a teaspoon of double cream or crème fraîche into the soup.
- Replace the lid and select the BLEND function. Press the start button
- The program will blend the cream and the soup together for ten seconds
- Pour your lovely creamy soup into a bowl, drop some more cream into the top and garnish with chopped chives.
- Fresh and comforting!
