Cauliflower cheese soup

Comorting, creamy, thick and delicious. Like a hug in a bowl

Ingredients

  • About a tennis ball sized piece cut into small pieces Cauliflower
  • About 6 inch piece cut into small pieces Celery
  • 1 chopped Spring onion
  • 1 clove minced Garlic
  • 1 tsp Crème fraiche
  • small handful grated cheddar
  • small potato
  • 1/2 vegetable stock cube or stock pot made up with 200ml water
  • white pepper
  • chives to garnish

Instructions

  1. Start by chopping the veggies into small pieces, place into the soup maker
  2. Make up 200ml stock using the stock cube or stock pot. you can of course use your own stock. Chicken stock will work with this recipe too
  3. Add the stock to the veggies. Replace the lid and turn on the power
  4. Using the function button, select the SMOOTH program. Press START
  5. This program will gently cook and then blend your ingredients. when the soup is ready, the machine will beep 3 times and flash.
  6. Carefully remove the lid and add the crème fraiche and cheese. Save a little cheese for garnish
  7. Replace the lid, and using the function button, navigate to the program BLEND. press start
  8. This program will blend together the soup, cream and cheese. After ten seconds your soup is ready
  9. Unplug the soup maker and pour out your soup. Top with chives, more cheese and white pepper. Enjoy!
