Chicken Noodle soup
A bowl of comforting noodles with a the warmth of ginger and chilli. So moreish!
Ingredients
- 1/2 Carrot, sliced thin
- 1 Spring onion sliced
- 1/2 cup cooked chicken
- 2 tbsp Frozen sweetcorn
- 2 tbsp Frozen peas or frozen edamame beans
- 1/2 cup Dried noodles or udon noodles
- 1 tsp minced garlic or garlic purée
- 1/2 tsp chopped ginger or ginger purée
- Make 200ml Chicken Stock
- Splash soy sauce
- salt and pepper
Instructions
- Chop the veggies: Slice the spring onions and carrots. Slicing the carrots lengthways with a mandolin creates a more oriental look but it's not essential
- Fill the soup maker with the chopped veggies, cooked chicken, frozen veg (there is need to defrost the frozen veg).Add the garlic and ginger and the noodles. It might be a good idea to break the noodles a little in order to fit them into the soup maker. Season with salt and pepper
- Make the stock: make up 200ml of chicken stock using either ½ stock pot or half a stock cube. You can of course use your own homemade stock
- Pour the stock into the soup maker: Fill to the MAX line inside the machine. Do not overfill.
- Replace the lid: Align the shape of the lid with the shape of the body, the lights should stop flashing and it should stop beeping. Using the selection button, highlight the CHUNKY function on the machine. Press start.
- Sit back and relax! The cooking program will gently cook the ingredients without stirring. When the soup is ready the machine will beep 3 times. Carefully open the lid . sprinkle with chilli flakes and splash with Dark Soy sauce.
- you can add other veggies to this soup. Try celery, tenderstem broccoli, sugar snap peas - after all this soup is all about you and how you like it !
