Cream of Asparagus

Asparagus is so fresh and tasty. It is low in calories yet boasts a wealth of nutrients such as Vitamins K, A, C and E,


  • about 5 Asparagus spears, chopped
  • 1 stalk celery, chopped
  • 3 Spring onions, chopped
  • 1 clove garlic, minced
  • 200ml vegetable or chicken stock ( use home made or from 1/2 stock cube or stockpot)
  • 1 tsp double cream or crème fraîche
  • knob of butter
  • Fresh chopped chives
  • salt and pepper


  1. Start by chopping the vegetables. When preparing the spears, simply break off the tougher ends as you will find there is a natural point where they will snap off. Cut the celery, asparagus and Spring onions into 1 inch pieces. Add to the Justme Soup maker
  2. Add a minced clove of garlic or for convenience you could use garlic puree
  3. You can use your own homemade stock , or for convenience you can make up 200ml of stock using 1/2 stockpot or stockcube. Pour into the soup maker
  4. For extra richness add a knob of butter
  5. Add salt and pepper
  6. Replace the lid and select the SMOOTH function. Press the start button. The program will gently cook the ingredients and then blend to a smooth consistency.
  7. When the soup has cooked and blended after 19 minutes, carefully remove the lid. If you wish to add the cream, it is a good idea to to add it now for extra creaminess
  8. Drop a teaspoon of double cream or crème fraîche into the soup.
  9. Replace the lid and select the BLEND function. Press the start button
  10. The program will blend the cream and the soup together for ten seconds
  11. Pour your lovely creamy soup into a bowl, drop some more cream into the top and garnish with chopped chives.
  12. Fresh and comforting!
