Cream of Mushroom soup

A rich and earthy flavour so comforting and utterly satisfying!

Ingredients

  • 1 clove of garlic, minced
  • about 8 Chestnut mushrooms
  • Red onion, about 2 sliced chopped
  • 1/2 tsp Dried thyme
  • knob of butter
  • 200ml Vegetable stock ( you can use 1/2 stock cube or stockpot or your own veg stock )
  • Tablespoon of crème fraiche

Instructions

  1. Start by chopping the mushrooms, onion and mince the garlic
  2. tip into a frying pan just to give them a quick sauté in the butter. Add the dried thyme, Sautéeing the mushrooms intensifies the flavours
  3. After a few moments, tip the mushrooms and onions into the soup maker
  4. Make up 200ml of stock and tip into the soup maker
  5. Put the lid on the Justme Soup maker and select the SMOOTH function
  6. Press the start button. The smooth light will stop flashing and remain constant and steady. This indicates the program has started
  7. The machine will start by gently cooking the ingredients, after several minutes of cooking it will start to blend the soup.
  8. When the program has finished the soup maker will beep 3 times. The length of the program is 19 minutes.
  9. Carefully remove the lid, add a dollop of creme fraiche and then replace the lid
  10. Select the BLEND function, this will provide a 10 second burst of blending which will mix together the soup and cream
  11. when the 10 seconds i up, the machine will beep 3 times. Carefully remove the lid and pour out your soup. Add a spot more crème fraiche and some white pepper.
