Red Pepper, tomato and chilli soup

Packed with Vitamin C, and Vitamin A - make this soup as spicy as you like it

Ingredients

  • 1/3 Red Pepper
  • 1/4 Red onion chopped
  • Clove of garlic, minced
  • 1 medium tomato chopped
  • chopped 1/2 a carrot
  • Fresh Red Chilli Pepper - as much or as little as you like
  • 200ml Vegetable stock ( you can use your own stock or make up 200ml using 1/2 stock cube or stockpot)
  • Dried chilli flakes and chopped chives for garnish

Instructions

  1. Chop the pepper, tomatoes, carrot, onions into small pieces and place into the soup maker
  2. Crush the garlic and chop the chilli pepper ( depending on how hot you like it - one full chilli can be quite spicy!) - add to the machine
  3. Make up 200ml of stock and add to the veggies in the soup maker
  4. replace the lid and select the SMOOTH function
  5. This program will cook and then blend the vegetables in 19 minutes.
  6. When the program has finished the machine will beep 3 times.
  7. Disconnect from the power. Carefully remove the lid
  8. Pour out your soup, top with dried chilli flakes and chopped chives.
  9. Too hot for you ? Add a dollop of cream or crème fraiche
