Red Pepper, tomato and chilli soup
Packed with Vitamin C, and Vitamin A - make this soup as spicy as you like it
Ingredients
- 1/3 Red Pepper
- 1/4 Red onion chopped
- Clove of garlic, minced
- 1 medium tomato chopped
- chopped 1/2 a carrot
- Fresh Red Chilli Pepper - as much or as little as you like
- 200ml Vegetable stock ( you can use your own stock or make up 200ml using 1/2 stock cube or stockpot)
- Dried chilli flakes and chopped chives for garnish
Instructions
- Chop the pepper, tomatoes, carrot, onions into small pieces and place into the soup maker
- Crush the garlic and chop the chilli pepper ( depending on how hot you like it - one full chilli can be quite spicy!) - add to the machine
- Make up 200ml of stock and add to the veggies in the soup maker
- replace the lid and select the SMOOTH function
- This program will cook and then blend the vegetables in 19 minutes.
- When the program has finished the machine will beep 3 times.
- Disconnect from the power. Carefully remove the lid
- Pour out your soup, top with dried chilli flakes and chopped chives.
- Too hot for you ? Add a dollop of cream or crème fraiche
